Thank you so much for visiting our booth at The Auckland Food Show. Below are the delicious recipes from our team:

  1. Pumpkin Hummus

Ingredients:

  • 400g roasted pumpkin

  • 300g cooked chickpeas

  • 100g tahini

  • 80g olive oil

  • 60g lemon juice

  • 10g garlic

  • 8g salt

  • 3g ground coriander

  • 2g black pepper

  • 40–60g cold water (if needed)

Method:

  • Roast pumpkin until soft.

  • Blend all ingredients until smooth.

2. Olive Oil & Herb Crackers

Ingredients:

  • 100g plain flour

  • 1 tbsp olive oil

  • 1/4 tsp salt

  • 1/2 tsp dried herbs

  • 40–50g water (to bind)

Method:

  • Mix dry ingredients.

  • Add oil and water, mix to a dough.

  • Roll thin, cut shapes, and bake at 180°C until golden.

3. Herby Cream Cheese Dip

Ingredients:

  • 500g cream cheese

  • 300g sour cream or Greek yogurt

  • 40g lemon juice

  • 5g lemon zest

  • 10g garlic

  • 120g fresh herbs (parsley, chives, dill, mint, etc.)

  • 6g salt

  • 2g black pepper

  • 20–40g water or milk (optional)

Method:

  • Blend cream cheese and sour cream/yogurt.

  • Add herbs, lemon, garlic, salt & pepper.

  • Blend smooth.

4. Seed & Nut Power Bliss Balls

This recipe makes 60 balls.

Ingredients:

  • 1 cup pumpkin seeds

  • 1 cup sunflower seeds

  • 1 cup almonds

  • 1 cup cashews

  • 2 cups oats

  • 1.5 cups raisins

  • 10 Medjool dates (or 1 cup packed regular dates, soaked in warm water for 10 mins and drained)

  • 1/2 cup desiccated coconut (optional for rolling)

  • 2 tablespoons honey or maple syrup (optional, for extra sweetness)

  • 2 tablespoons cocoa powder or cinnamon (optional, for flavor)

  • 2–4 tablespoons water (to help bind)

Method:

  • Blend dry ingredients: In a food processor, pulse the pumpkin seeds, sunflower seeds, almonds,

    cashews, and oats until they form a fine crumb.

  • Add raisins and dates: Add in the raisins and dates, and blend until the mixture starts to come together. If using, add honey/maple syrup and cocoa or cinnamon now.

  • Add water as needed: Add water 1 tablespoon at a time until the mix is sticky enough to roll into balls.

  • Roll into balls: Use a teaspoon or small scoop to roll into bite-sized balls. You should get around 60.

  • Optional: Roll in desiccated coconut or crushed seeds.

  • Chill to firm: Place in the fridge for 30 minutes to set.
